Running out of time because I am dying of hunger. I threw together some chicken, plum wine, garlic, tomatoes, grapes and pasta. I don't think you can ever go wrong with pasta and olive oil. I was proud since it only took me 20 minutes and you do not need to marinate anything. The colors are very similar to the browns and reds of fall! A reminder of seasons to come. I used the organic multi-grain noodles, tomatoes, and champagne grapes all from Trader Joe's. It's incredibly easy to put together. In a skillet, add your olive oil and some garlic. Wait until garlic turns a tid brown and add your chicken. While your chicken is sizzling, add some wine and balsamic vinegar. I used plum wine, so it had a sweetness that is already infused and did not need to add extra sugar. I like to crisp the skin side first then flip the chicken over. It should take you about fifteen minutes depending on how big the chicken pieces are. I always like to check by cutting open the chicken. If it is still raw on the inside, I place it in the microwave to finish up the cooking process. Finally, I boiled up the noodles and drained it. I sauteed it inside the sauce left over from the skillet I used to cook the chicken for added flavor and topped it off with some garlic salt. Added some tomatoes, and grapes with a hint of spice from peppers and cilantro I had laying around to compliment the vinegar. The grapes really do make it special and unique.
